Recipe
Pineapples are a delicious, nutritious addition to any meal, with a high dose of
Vitamin C, the vitamin essential for the growth and repair of skin tissue and to
maintain healthy teeth and bones.
As an aid to digestion, pineapples are a must for your menu.
They are excellent meat tenderizers. Marinate tough meat for one hour with grated
raw pineapple. This will soften and flavor the meat. The pineapple can then be scraped
off the meat and added to water, wine or meat stock and thickened with maizena to
form delicious gravy. Serve with pork, beef or chicken!
Use pineapples for a sweet-and-sour flavour to any stir-fry!
Remember to boil fresh or frozen pineapple before it can be used with gelatin as
bromelain prevents the gelatin from setting.
The recipes below were compiled from over 700 recipe entries submitted at a recipe
competition on a pineapple festival held in Hluhluwe. We would like to thank everyone
who submitted recipes. A contribution list is available from the office.

Storage
Queen pineapple is best kept in a cool place without too much variation in temperature.
They can be stored in the refrigerator, either whole or with the skin and leaves
removed. A fruit bowl on the kitchen table is generally the ideal place to store
a pineapple.
